Abstract
Fish, which was regarded as a cheap food years ago has became a luxury item in many parts of the world. Demand for fish exceeds the supply. As a result the price of fish continues to rise at a faster rate than that of meat and poultry. Several health benefits have been associated with the regular consumption of fish. This also adds to the increasing demand.Owing to the increasing demand for fish, export requirements and matching R&D efforts, the techniques for production, processing, product formulation, packaging, storage, transportation etc. have undergone significant changes. Increasing consumer awareness with regard to quality of the products also has necessitated the development and application of improved methods.
