Abstract
Seafood processing and seafood quality assurance are complementary disciplines that eventually lead to value addition. If fish is preserved at the time of glut landings and distributed uniformly through space and time, both the producer and consumer benefit. Freezing and drying are some of the examples of value added fish processing
